Chefs’ recipes: Ravioli stuffed with smoked cod on saltwater and tartare of red shrimp
Of the recipes haute cuisine we propose: ravioli stuffed with smoked cod on saltwater and tartare of red shrimp that can be tasted with pleasure at the restaurant “La maniera di Carlo” in Milan (www.lamanieradicarlo.it). The recipe of ravioli with fish is of the young talent Lorenzo Santi. Ingredients:
  • 100 g smoked cod
  • 40g fresh ricotta
  • Thyme, basil and marjoram
  • 1 tablespoon olive oil
  • Salt and pepper
  • 5 red shrimps
  • Lemon zest
  • Mussels and clams emulsified water
  • Cream butter
  • Homemade egg noodles
Procedure: For the ravioli filling: mix the cod together, add the ricotta cheese, herbs (thyme, marjoram and basil); diluted the mixture with oil, salt and pepper and put the stuffing in a pastry bag. Roll out the dough 50 cm long and 10 cm wide approx. Place on each 5 cm the equivalent of a tablespoon of filling. Close folding the dough and seal to remove all the air. With a pastry rings then cut the ravioli. Cook the ravioli in boiling water according to the thickness of the pasta, drain and toss in a soutè made with two tablespoons of butter cream and a small ladle of clams’ emulsified water with plenty of chopped marjoram. Assembly: Place the ravioli in a circle on a plate, add the sauce and place the chopped shrimp in the center of the dish.
