www.davittorio.com) in Brusaporto (BG). It seems an illusion that confuses the sweet taste with the salt one... but this result comes from the skills of Chicco and Bobo Cerea.
Ingredients:
Mascarpone mousse
- 100 g milk
- 250 g cream
- 150 g sugar
- 300 g mascarpone
- 5 g salt
Heat the liquid with the sugar little by little, salt and mascarpone to prevent formation of lumps.
Place the mixture into a trap.
Tomatoes
- 300 g orange juice
- 100 g sugar
- 1 vanilla pod
Bring to a boil the 3 components and blanch in the tomatoes (about 20) for 5 seconds, drain and place in a bowl with water and ice.
Then reduce the wet, which will be used to preserve the tomatoes.
Sour cherries sauce
Reduce the sour cherries puree and water
Procedure:
Boil whole milk in a pan with low edge and 30 cm in diameter, up to 70 °C.
Slowly the fat in milk will form a film on the surface, remove the foil and store in a plastic wrap.
Closing on a film of milk a layer of mascarpone mousse, yogurt sorbet, cherry and again the foam.
Finish the dish with a square of cherry salsa, cherry tomatoes, blanched in orange juice and a basil leaf caramelized.
