A South Tyrolean haute cuisine cookbook signed by the chef Herbert Hintner
“La mia cucina altoatesina” is an invaluable recipe "album” signed by Herbert Hintner, chef at the restaurant Zur Rose from San Michele Appiano (BZ). In this book Hintner collects a series of dishes divided by seasons, since its cuisine play on the genuineness and seasonal products, many of which are characteristic of the South Tyrol. As he explains in the preface: "The careful selection of ingredients becomes measure of all things, ennoble rather than undermining is the art or the challenge of every day”. His culinary philosophy revolves around traditional dishes from his region, respecting the typical ingredients, but reserve ample space for personal creations, inspired by his homeland. So, this can be called a book containing preparations that draw on regional cuisine, but do not neglect modern taste. Not only firsts but also some of the "classic" Hintner, those signature dishes like the salad of bacon dumplings, the dumplings cheese souffle or the apple strudel recipe.
