It is presented in Milan by Paolo Marchi and chef Massimo Bottura the  Identità golose 2011 Guide, which includes 620 reports of restaurants - of which 157 new - following food and wine tours through 26 countries, from Portugal to Turkey, passing through China and Japan. With an introduction by the founder of Slow Food, Carlo Petrini, on the theme of "responsibility of the chef", the new guide does not give ratings, but provides practical information on such premises: what to eat, what loves and what not loves to cook, the chef, the prices, where to sleep, a balance that leans towards the tradition or innovation. Inside the Identità golose 2011 restaurant guide, are "The young stars of 2011", 11 special awards for cuisine in Italy assigned to the under 40:
