Marinated Scampi with cherries of Marostica

  • 16 scampi
  • Cherry sauce * (1 kg Cherries, 500g sugar, cloves, 1 cinnamon stick, lemon zest, white wine vinegar)
  • valerian
  • rocket
  • one basket of cherries of Marostica IGP
Preparation: for the sauce of cherries you need to mix some pickled cherries with a percentage equal to 20% of apple vinegar. For the pickled cherries: Take 1 kg of cherries, wash and take out the petiole. Arrange alternate layers of sugar (500g in total) in an airtight glass jar. Add a few cloves and a cinnamon stick. Put in a pot of vinegar and lemon zest, bring to boil and, after cooling down, pour it over the cherries. Close the jar and store in a cool place and wait a month before using the cherries. For the recipe: Wash the scampi, remove their head and shell, being careful to preserve the final section of the tail and put them to marinate for no longer than 10 min in the cherry sauce with salt and pepper. Lay then in the plate, napped with a tablespoon of sauce and finally decorate with leaves of lettuce, arugula and sliced raw cherries.
